So does the game check at the daily update for what the next days training will be? Has there been a dev post about this subject?

I would like to give an answer on that but I am not sure what exactly you mean. Can you explain that any further?

My bad. So say I start the day with a coaching give 3 lessons to a player but decided to switch the coach to another halfway through the day. Who would get the training?

Training actually happens during the update. So if you change it in the last minute only that one player will get the training who has it saved last.
